Welcome to National Poultry Day! In honor of this day I thought I’d share a tasty, easy to make, low carb recipe. This is a Truly delicious spinach, onion and feta stuffed chicken breasts. Perfect to make while entertaining!
1/4 cup crumbled feta cheese
8 oz boneless skinless chicken breast
1 tsp extra virgin olive oil
1 cup spinach
1 tsp black pepper
1 tsp salt
1 tsp lemon peel
1 small chopped onion
In a large non-stick skillet, heat olive oil; sauté onion until golden, 5 minutes.
Wilt spinach (steam or heat damp in pan); stir in lemon zest, feta, salt and pepper. Set aside.
Divide spinach mixture between chicken breast cutlets.
Roll up and secure with toothpicks.
In same skillet, heat remaining oil over medium-high heat.
Cook chicken, turning occasionally until golden brown and cooked through, about 10 minutes.
