  • IMG_0159-Sautéed-broccoli-with-yellow-and-red-bell-peppers-750March is National Broccoli and Bell Pepper Month and we are celebrating by sharing this incredible side dish.  In just 20 minutes you can add color, nutrition, and amazing flavor to your dinner.


    • 1 tablespoon olive or vegetable oil
    • 2 cloves garlic, finely chopped
    • 2 cups broccoli florets
    • 1 large red bell pepper, coarsely chopped (about 1 cup)
    • 1 small onion, coarsely chopped (about 1/2 cup)
    • 3 tablespoons water
    • 1/4 teaspoon salt
    • 2 tablespoon shredded Parmesan cheese


    1. In 12-inch nonstick skillet, heat oil over medium-high heat.
    2. Stir garlic into oil. Immediately add broccoli, bell pepper, onion and water. Cook 4 to 6 minutes, stirring constantly, until broccoli is crisp-tender and onion is beginning to brown. Stir in salt.
    3. Place in serving dish; top with cheese.
